For the sauce:
- 2 tablespoons sesame paste or tahini
- 2 tablespoons soy sauce
- 1 tablespoon Chinese black vinegar
- 1 tablespoon chili oil plus extra for garnish
- 1 teaspoon sugar
- 1 clove garlic minced
- ½ teaspoon Sichuan peppercorns ground
For the noodles:
- 8 oz wheat noodles or ramen/lo mein
- ½ cup ground pork or crumbled tofu
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons chopped scallions
- Optional toppings: crushed peanuts chopped pickled vegetables, bok choy
Cook noodles according to package instructions. Drain and set aside.
In a bowl, whisk together all sauce ingredients until smooth.
In a skillet over medium heat, cook ground pork or tofu with soy sauce and sesame oil until browned.
Divide sauce between serving bowls. Add noodles on top.
Top with cooked meat or tofu, scallions, and optional toppings like peanuts or chili oil.
