Ingredients
  

For the filling

  • 2 cups cooked chicken, shredded
  • ½ cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ¼ cup green onions, chopped

  • Egg roll wrappers
  • Cooking spray For air frying

Preparation

  • In a mixing bowl, combine shredded chicken, buffalo sauce, shredded cheese, and green onions until well mixed.
  • Lay out an egg roll wrapper on a clean surface. Place about 2 tablespoons of the chicken mixture in the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with a little water if needed.
  • Repeat with remaining wrappers and filling.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer.
  • Cook for about 10-12 minutes, flipping halfway through, until golden brown and crispy.

Serving

  • Serve these delicious egg rolls hot out of the air fryer with ranch or blue cheese dressing for dipping and extra buffalo sauce if desired.

Notes

Make sure the chicken is well shredded for easy filling. Adjust the amount of buffalo sauce to suit your spice preference. For extra crunch, brush the egg rolls with a little oil before air frying. You can add vegetables like peppers or celery for more flavor.
