Preparation

  • Start by quartering and cubing the zucchini.
  • Lightly spray the zucchini with olive oil.
  • Toss the zucchini with Italian seasoning, salt, and pepper.
  • Gently fold in the grated Parmesan cheese, making sure to coat the zucchini evenly without overmixing.

Cooking

  • Preheat the air fryer to 390°F (200°C) for about 3 minutes.
  • If needed, line the basket of the air fryer.
  • Add the zucchini in a single layer to the air fryer basket.
  • Air fry for 4 minutes. After that, toss the zucchini and continue to cook for another 4 to 5 minutes until they are golden brown and tender.
  • Serve hot and crispy. You can sprinkle extra Parmesan on top if you like.

Notes

Make sure to cut the zucchini into even pieces for consistent cooking. Use a high-quality grated Parmesan for the best flavor. Experiment with different seasonings like garlic powder or cayenne pepper for a spicy kick. Avoid overcrowding the air fryer basket to ensure even cooking. Leftovers can be stored in an airtight container for about 2 to 3 days.
