Apple Pie à la Mode

Ingredients
  

For the crust

  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold and cut into cubes) Ensure the butter is very cold for a flaky crust.
  • 110 g water Cold water for the dough.

For the filling

  • 1000 g apples (such as Pink Lady, Royal Gala, or Fuji) Peeled and sliced.
  • 75 g unsalted butter For melting over apples.
  • 190 g brown sugar
  • 1.25 tsp ground cinnamon
  • 1.25 tbsp cornstarch
  • 0.25 tsp salt
  • 2.5 tbsp water

For assembling and baking

  • 5 tbsp almond flour Or another type of finely ground nuts or breadcrumbs.
  • 1 tbsp water To mix with the egg.
  • 3 tbsp brown sugar For sprinkling on top of the crust.
  • Vanilla ice cream or any flavor you prefer For serving.

Instructions
 

For the crust

  • In a large bowl, mix the flour, granulated sugar, and salt.
  • Add the cold butter cubes and mix until the mixture looks like sand.
  • Pour in the cold water, little by little, while mixing until a dough forms.
  • Shape the dough into a ball, wrap it in plastic, and chill in the fridge for at least an hour.

For the filling

  • Peel and slice the apples.
  • In a large pan, melt 75 g of unsalted butter over medium heat.
  • Add the sliced apples, brown sugar, ground cinnamon, cornstarch, salt, and water. Cook until the apples are slightly soft.
  • Remove from heat and let the filling cool.

For assembling

  • Preheat the oven to 180°C (350°F).
  • Roll out half of the chilled dough and fit it into a pie dish.
  • Sprinkle the almond flour on the bottom of the crust to absorb moisture.
  • Pour the cooled apple filling into the crust.
  • Roll out the other half of the dough and place it over the filling. Seal the edges and make small slits on top to let steam escape.
  • Beat the egg and water together, and brush this mixture on top of the crust. Sprinkle with brown sugar.

For baking

  • Bake in the preheated oven for 45-50 minutes or until the crust is golden brown.
  • Once baked, remove from the oven and let it cool for a few minutes.

Notes

If you have leftovers, store the apple pie in an airtight container in the fridge for up to three days. Keep the ice cream in the freezer. It’s best to add the ice cream just before serving to maintain its texture.
