  • 4 large large yellow onions
  • 1 tablespoon olive oil
  • ½ teaspoon fresh thyme
  • to taste salt
  • to taste pepper
  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • ½ cup Asiago cheese divided

Preparation

  • Preheat your oven to 450°F (230°C).
  • Grease a baking dish and arrange the onion slices in a single, even layer.
  • Drizzle the onions with olive oil and sprinkle with thyme, salt, and pepper.

Roasting

  • Roast the onions for 20 minutes, or until they are soft and starting to caramelize.

Making the Cream Sauce

  • While the onions roast, heat the heavy cream in a saucepan over medium heat until it begins to simmer.
  • Stir in the Dijon mustard and half of the Asiago cheese until it is melted and combined.

Baking

  • Pour the creamy mixture over the roasted onions.
  • Top with the remaining Asiago cheese.
  • Cover the dish with foil and bake for an additional 20 minutes, or until the onions are tender, the cheese is melted, and the sauce is bubbling.

Notes

For best results, use fresh thyme and do not rush the roasting process. You can also experiment with other herbs or add more Asiago cheese on top before baking. Leftovers can be refrigerated for up to 3 days.
