  • 4 large large eggs
  • 4-5 slices thick-cut bacon Cook until crispy
  • 1 tablespoon butter or oil For cooking
  • ½ cup shredded cheddar cheese

  • 2 large flour tortillas (10-inch) For wrapping the filling
  • 2 tablespoons fresh chopped parsley For garnish

Preparation

  • In a skillet over medium heat, cook the bacon until crispy. Once done, chop it into bite-sized pieces.
  • In a bowl, beat the eggs with a pinch of salt and pepper.
  • Pour the beaten eggs into the skillet over medium heat. Stir gently and cook until the eggs are soft and fluffy, about 3–4 minutes.
  • Heat each tortilla in a pan on medium heat for about 30 seconds on each side.

Assembly

  • Place the cooked eggs in the center of each tortilla.
  • Sprinkle some cheddar cheese on top of the eggs, then add the chopped bacon.
  • Fold in the sides of each tortilla, and roll them into a burrito shape.

Cooking

  • Next, place the burritos in a hot, dry skillet for 1–2 minutes per side until they are crisp and golden.
  • Slice the burritos in half and sprinkle with fresh parsley before serving.

Notes

You can customize with extra toppings like salsa, hot sauce, or avocado. Pair with fresh fruit or breakfast potatoes. For a flavor twist, consider adding vegetables like bell peppers or onions when cooking the eggs.
