Main Ingredients

  • 2 pounds Yukon Gold potatoes Use for best flavor and texture.
  • ¼ cup unsalted butter Melted before adding other ingredients.
  • 2 cloves garlic (minced) Sautéed until lightly browned.
  • ½ cup milk Add more if needed for creaminess.
  • 4 slices bacon (cooked and chopped) Crispy for added texture and flavor.
  • ¼ teaspoon pepper
  • ¼ teaspoon salt (optional) Add to taste.

Preparation

  • Peel and quarter the potatoes into similar-sized pieces. Place them in a large pot and cover with water and a dash of salt.
  • Over medium-high heat, bring the pot to a boil. Once boiling, reduce the heat to medium and let it simmer for about 15-20 minutes or until the potatoes easily break apart when pierced with a fork. Drain the potatoes in a colander.

Cooking

  • Return the empty pot to the stove and heat the butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute, or until it starts to lightly brown. Remove from heat.
  • Pour the milk into the pot and let it warm for a moment.
  • Add the drained potatoes back into the pot. Using a potato masher, gently mash the potatoes with the butter mixture until smooth and creamy, being careful not to overmix as this can make the potatoes gluey.
  • Stir in the chopped bacon and pepper, and taste. Add salt if desired.

Notes

Serve hot. Pairs well with grilled meats or roasted chicken. Garnish with extra bacon or herbs if desired. Store leftovers in an airtight container in the refrigerator for 3-5 days, reheating gently.
