Ingredients
  

For the Apple Pie Fries

  • 1 ¼ cups canned Apple Pie Filling Increase to 1 3/4 cups if using US refrigerated pie crust.
  • 3 tbsp sugar Your choice – white, brown, or raw.
  • ¼ tsp cinnamon
  • 2 sheets frozen shortcrust pastry 25cm/10" square, do not thaw. Alternatively, use 14 oz refrigerated pie crust.
  • 1 egg egg For egg wash.
  • 2 tbsp sugar granules Optional, for sprinkling.
  • Oil spray Oil spray For preparing the baking tray.

For the Salted Caramel Sauce

  • 1 cup caster sugar
  • cup water
  • ½ cup heavy cream Not whipped.
  • ¼ tsp salt
  • 1 tbsp unsalted butter

Preparation of Apple Pie Fries

  • Place the Apple Pie Filling, sugar, and cinnamon in a food processor. Blend until smooth.
  • Quickly take one sheet of pastry and place it on a cutting board. Spread the filling over the pastry, leaving a thin border. Top with the second sheet of pastry.
  • Brush the top with an egg wash and sprinkle with sugar granules if using. Freeze the pastry for at least 1 hour.

Baking

  • Preheat the oven to 180C/350F. Prepare a large baking tray with oil spray (or use two small trays).
  • Remove the pastry from the freezer. Let it sit for 5 to 10 minutes to soften slightly, but do not let the filling defrost.
  • Cut the pastry into 'fries.' You can make 12 strips vertically and then cut them into 3 horizontal pieces, yielding 36 fries.
  • Carefully transfer the fries to the baking tray and let them reach room temperature while the oven heats.
  • Bake for 15 to 25 minutes until golden brown on top.
  • Once baked, remove from the oven, let cool for 5 minutes, and then move to a cooling rack.

Preparing Salted Caramel Sauce

  • In a saucepan, combine 1 cup caster sugar and 1/3 cup water. Cook over medium heat until the sugar dissolves.
  • Allow to boil without stirring until it reaches a deep amber color.
  • Remove from heat and carefully whisk in the heavy cream, salt, and butter.

Serving

  • Serve warm with Salted Caramel Sauce.

Notes

Be sure to work quickly with the pastry to avoid thawing too much. If you like a sweeter treat, use brown sugar in the filling for a richer flavor. Feel free to customize the filling with additional spices like nutmeg or allspice for added warmth.
