Easy Baked Beef Tacos

  • 1 lb ground beef
  • 1 oz taco seasoning one packet
  • ⅔ cup water
  • 2 tbsp vegetable oil for the sheet pan
  • 8 corn tortillas
  • 1 ½ cup shredded cheese any melting cheese works

  • Add the ground beef to a large skillet over medium heat. Break it into crumbles and cook about 5 minutes, until browned. Drain excess grease.
  • Stir in the taco seasoning and water. Lower the heat and cook 5 minutes more, until thickened and the beef reaches 160 degrees F.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Pour the oil onto a large sheet pan.
  • Wrap the corn tortillas in a damp paper towel and microwave for 30 seconds, until pliable.
  • Place each tortilla on the pan and rub both sides in the oil. Fill half of each tortilla with beef, top with cheese, and fold in half.
  • Space the tacos apart. Bake 5 to 7 minutes, flip, and bake 5 to 7 minutes more, until crisp and golden.
  • Remove carefully and serve warm with your favorite toppings.

Notes

Nutrition values are an estimate per serving (2 tacos) and do not include toppings. Refrigerate leftovers within 2 hours; they keep about 3 days. Reheat in a 375 degrees F oven for 10 to 15 minutes to keep the shells crisp.
