Baked Honey Garlic Chicken and Sweet Potato

Main Ingredients
- 2 boneless skinless chicken breasts about 1 pound total
- 2 medium sweet potatoes peeled and cut into 3/4 inch cubes
- ΒΌ cup honey
- 2 cloves garlic minced
- 2 tbsp low sodium soy sauce
- 1 tbsp olive oil
- black pepper to taste
- fresh parsley chopped, for garnish
Cooking
Heat the oven. Preheat to 400 degrees F and grease a baking dish.
Whisk the glaze. Combine honey, garlic, soy sauce, olive oil, and pepper.
Arrange. Place the chicken in the center and scatter the sweet potato cubes around it.
Coat. Pour the glaze over everything and toss the potatoes to coat.
Bake. Bake 25 to 30 minutes, spooning sauce over the chicken halfway, until the potatoes are fork tender and the chicken is 165 degrees F.
Rest. Rest the chicken 5 minutes, then spoon over the pan juices and add parsley.
Substitutions: Use maple syrup for honey and chicken thighs for breasts (add a few minutes).
Tips: Cut the cubes evenly and pound thick breasts for even cooking.
Storage: Refrigerate 3 to 4 days and reheat to 165 degrees F. Thaw frozen portions overnight.
