  • 1 lb large shrimp Choose fresh and high-quality shrimp.
  • 1 cup lump crab meat Adds sweetness and texture.
  • 1 cup buttery crackers Crushed for a tasty stuffing base.
  • 2 cloves garlic Minced for flavor.
  • ¼ cup fresh parsley Chopped for color and freshness.
  • 1 Tbsp lemon juice Brings zest and brightness.

Optional Ingredients

  • ½ cup Parmesan cheese For a crispy, cheesy crust.
  • 1 cup spinach For added nutrition and color.
  • 1 cup variety of seafood Scallops or lobster can be added.

Preparation

  • Clean the shrimp thoroughly by removing the shells and deveining them.
  • Butterfly each shrimp to create more space for stuffing.

Stuffing

  • In a bowl, mix together the crab meat, crushed crackers, minced garlic, chopped parsley, and lemon juice.
  • Taste and adjust seasonings if needed.

Assembly

  • Preheat your oven to 350°F (175°C).
  • Arrange the butterflied shrimp in a greased baking dish, and place a generous amount of the stuffing on each shrimp.
  • Sprinkle Parmesan cheese on top if using.

Baking

  • Bake the casserole in the preheated oven for 25-30 minutes or until the shrimp are pink and opaque and the top is golden brown.

Notes

For a gluten-free version, substitute gluten-free crackers for the stuffing. Serve with a fresh garden salad or roasted vegetables for balance.
