  • 2 boneless skinless chicken breasts (6 to 8 oz each)
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tsp lemon juice
  • 2 tbsp brown sugar
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp dried rosemary crushed
  • ½ tsp garlic powder
  • ½ tsp onion powder

Cooking

  • Whisk the olive oil, balsamic vinegar, soy sauce, lemon juice, brown sugar, salt, pepper, rosemary, garlic powder, and onion powder in a shallow baking dish until the sugar dissolves.
  • Add the chicken and turn to coat. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  • Preheat the air fryer to 360 degrees F for 5 minutes.
  • Lift the chicken from the marinade, let the extra drip off, and discard the marinade. Place the chicken in a single layer in the basket and cook for 16 to 20 minutes, turning after 10 minutes, until the thickest part reads 165 degrees F.
  • Rest the chicken on a cutting board for 5 minutes, then slice and serve.

Notes

Discard the leftover marinade. Store leftovers in an airtight container in the refrigerator for 3 to 4 days and reheat in the air fryer at 350 degrees F for about 3 to 4 minutes. Nutrition is an estimate and counts only part of the marinade.
