  • 3 very ripe bananas mashed
  • ⅓ cup butter melted
  • ½ cup granulated sugar
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 ½ cup all-purpose flour
  • ½ cup pecans chopped

Cooking

  • Heat the oven to 350 degrees F and grease an 8x4 inch loaf pan.
  • Mash the bananas with a fork in a large bowl until mostly smooth.
  • Stir in the melted butter, then mix in the sugar, egg, and vanilla.
  • Sprinkle the baking soda and salt over the batter and stir them in.
  • Add the flour and fold just until no dry streaks remain.
  • Fold in the chopped pecans and pour the batter into the pan.
  • Bake for 60 to 65 minutes, until a toothpick inserted in the center comes out clean.
  • Cool in the pan for about 10 minutes, then move the loaf to a wire rack to cool completely.

Notes
