Banana Walnut Bread with Cream Cheese Frosting

  • 3 very ripe bananas mashed
  • ⅓ cup unsalted butter melted
  • ¾ cup granulated sugar
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 pinch salt
  • 1.5 cups all-purpose flour
  • ½ cup walnuts chopped, toasted if desired
  • 4 oz cream cheese softened, for the frosting
  • ¼ cup unsalted butter softened, for the frosting
  • 1 cup powdered sugar for the frosting
  • 1 tsp vanilla extract for the frosting

Instructions
 

Cooking

  • Heat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Mash the bananas and stir in the melted butter. Mix in the baking soda, salt, sugar, egg, and vanilla. Fold in the flour until just combined, then the walnuts.
  • Pour into the pan and bake 55 to 60 minutes until a toothpick comes out clean. Cool 10 minutes in the pan, then cool completely on a wire rack.
  • Beat the cream cheese and butter until smooth, then beat in the powdered sugar and vanilla until creamy.
  • Spread the frosting over the cooled loaf and sprinkle with extra walnuts.

Notes
