  • 1.5 lbs boneless chicken breast, cubed
  • 2 tbsp vegetable oil For frying
  • 2 cups cooked rice Day-old rice works best
  • ½ cup sweet chili sauce Adjust to taste
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Feel free to add any favorites
  • 2 pieces green onions, chopped For garnish
  • 2 pieces eggs, beaten Optional for variation
  • to taste salt and pepper
  • sesame seeds for garnish

Instructions
 

Preparation

  • Heat vegetable oil in a large skillet over medium heat.
  • Add cubed chicken and season with salt and pepper, cooking until golden brown and cooked through.
  • Add garlic and mixed vegetables, cooking until vegetables are tender.
  • Push chicken and vegetables to the side of the skillet and pour beaten eggs into the pan, scrambling until fully cooked.
  • Stir in the cooked rice and sweet chili sauce, mixing everything together until heated through.
  • Garnish with chopped green onions and sesame seeds before serving.

Notes

To store leftovers, let the fried rice cool and place in an airtight container. Refrigerate for up to 3-4 days or freeze for up to 2 months. Reheat thoroughly before serving. Use leftover or day-old rice for best results.
