For the Chicken

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil For cooking the chicken
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon chili powder

For the Salad

  • 8 cups chopped romaine lettuce
  • 15 ounces canned black beans (drained)
  • 2 medium roma tomatoes (diced)
  • 1.5 cups corn (off the cob, canned, or frozen)
  • 0.25 cup chopped red onion
  • 1 cup shredded mozzarella or gouda cheese
  • 1 each avocado (sliced)
  • 1 cup tortilla strips

For the Dressing

  • 0.25 cup BBQ sauce
  • 0.75 cup ranch dressing

Preparation

  • In a small dish, combine the kosher salt, onion powder, garlic powder, smoked paprika, and chili powder. Sprinkle this seasoning mix over the chicken breasts.
  • Heat the olive oil in a skillet over medium heat. Once hot, add the seasoned chicken. Cook each side for a few minutes until the chicken is cooked through.

Assembly

  • In a large bowl, place the chopped romaine lettuce.
  • On top of the lettuce, arrange the cooked chicken, black beans, diced tomatoes, corn, chopped red onion, cheese, avocado slices, and tortilla strips.
  • Finally, drizzle BBQ sauce and ranch dressing over everything.

Notes

Serve immediately for the best taste and freshness. Store leftovers in an airtight container in the refrigerator for 2-3 days, keeping the dressing separate until ready to eat. To make it healthier, use a lighter ranch dressing or homemade dressing.
