  • 100 g 100 g sourdough starter Ensure the starter is active.
  • 15 g 15 g salt

Preparation

  • Feed your sourdough starter the night before you plan to bake to ensure it's active.
  • In the morning, mix the bread flour and water in a large bowl until just combined and let rest for about 30 minutes.
  • Add the sourdough starter and salt to the dough, mixing well until fully combined.
  • Gently stretch and fold the dough in the bowl for about 5 minutes. Then shape into a ball and place seam-side down in a lightly floured bowl.
  • Cover the bowl with a damp cloth or plastic wrap and let rise in the fridge for 12-24 hours.

Baking

  • Preheat your oven to 450°F (230°C) after the dough has finished fermenting.
  • Transfer the dough onto a baking sheet lined with parchment paper and score the top with a sharp knife or bread lame.
  • Bake in the preheated oven until golden brown.

Notes

Store at room temperature in a paper bag or wrapped in a clean towel. For longer storage, slice and freeze in an airtight container.
