Filling

  • 4 cups fresh blackberries (about 2 [12-oz.] packages) Use fresh or thawed frozen blackberries.
  • ¾ cup granulated sugar (divided) Divide into ½ cup for filling and ¼ cup for Bisquick mixture.
  • 1 tsp grated lemon zest Pairs well with blackberries.

Cobbler Base

  • 1 cup Bisquick Baking Mix Simplifies the recipe.
  • 1 cup whole milk Can substitute with almond milk for a dairy-free version.
  • ½ cup unsalted butter, melted Use for greasing the pan.
  • 1 tsp vanilla extract Adds flavor to the cobbler base.

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • In a medium bowl, mix fresh blackberries with ½ cup of sugar, lemon zest, and lemon juice. Let it sit for about 30 minutes to blend the flavors.
  • In another bowl, mix Bisquick, ¼ cup of sugar, milk, and vanilla extract until smooth.

Baking

  • Melt butter in an 11 x 7-inch baking dish and pour the melted butter into the dish.
  • Spread the Bisquick mixture over the melted butter without stirring.
  • Scatter the blackberries on top and spoon any extra sugar and juices over them.
  • Bake for about 45 minutes or until the top is golden brown and bubbly.
  • Let it cool for a few minutes before serving it warm, ideally with a scoop of vanilla ice cream.

Notes

For a gluten-free version, substitute the Bisquick with a gluten-free baking mix. You can adjust sweetness with more or less sugar according to your taste.
