- 1 cup granulated sugar
- 1 teaspoon baking powder
- 3 cups all-purpose flour
- ¼ teaspoon salt
- Zest of one lemon
- 1 cup unsalted butter cold and cut into pieces
- 1 egg
- 4 cups fresh blackberries
- ½ cup granulated sugar for the berry layer
- 4 teaspoons cornstarch
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking pan.
In a medium bowl, combine 1 cup sugar, flour, baking powder, salt, and lemon zest.
Add cold butter and egg to the flour mixture. Use a pastry cutter or your hands to mix until crumbly.
Press half of the dough into the bottom of the prepared pan.
In another bowl, mix blackberries with 1/2 cup sugar and cornstarch.
Spread the berry mixture evenly over the crust.
Crumble the remaining dough over the berry layer.
Bake in preheated oven for 35–40 minutes, until top is golden brown.
Allow to cool completely before cutting into bars.
