Crust and Topping
- 3 cups all-purpose flour
- 1 cup granulated white sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup butter cut into pieces
- 1 large egg
Blackberry Filling
- 4 cups fresh blackberries
- 1 tablespoon fresh lemon juice
- 1 tablespoon cornstarch
- ¾ cup granulated white sugar
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking pan.
In a large bowl, combine flour, 1 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
Stir in the beaten egg with a fork. Press half of the dough into the bottom of the prepared pan.
In a separate bowl, mix together blackberries, lemon juice, cornstarch, and ¾ cup sugar.
Spread the blackberry mixture evenly over the crust.
Crumble the remaining dough over the blackberry layer.
Bake for 30–35 minutes, or until the top is lightly browned.
Allow to cool completely before cutting into bars.
