Ingredients
  

Crust Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 cup unsalted butter, softened Use cold, cubed butter for better texture.
  • 1 teaspoon salt

Filling Ingredients

  • 2 cups fresh or frozen blackberries If using frozen, thaw and drain before use.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Preparation

  • Make the crust by mixing cold, cubed butter, flour, and a pinch of salt in a bowl until it resembles coarse crumbs.
  • Add sugar to the mixture and combine well.
  • Gradually add cold water until a dough forms, then chill for about 30 minutes.
  • Preheat oven to 350°F (175°C).

Prepare the Filling

  • In another bowl, mix blackberries with sugar, cornstarch, and lemon juice.

Assemble and Bake

  • Roll out half of the chilled dough and place it into a greased 9x13 inch baking dish.
  • Evenly spread the blackberry filling on top of the crust.
  • Crumble the remaining dough over the filling for a topping.
  • Bake for 35-40 minutes until the top is golden.
  • Allow to cool completely in the pan before cutting into squares.

Notes

Serve warm or chilled, and pair with vanilla ice cream or whipped cream for added indulgence. Store in an airtight container in the refrigerator for up to three days.
