Blondies are a delicious, buttery treat filled with chocolate chips and walnuts, perfect for any occasion.

Ingredients
  

Main Ingredients

  • 125 g unsalted butter 1 US stick
  • 1 cup brown sugar light brown sugar is also okay, but not dark brown
  • 1 large egg ~50g/2 oz
  • 1 tsp vanilla extract
  • 1 cup flour plain/all-purpose
  • ¼ tsp cooking salt / kosher salt halve for table salt
  • 1 cup white chocolate chips
  • ½ cup walnuts roughly chopped
  • ¼ tsp sea salt flakes for sprinkling on top

Preparation

  • Preheat the oven to 180°C/350°F (160°C fan-forced). Grease a 20 cm/8″ square pan with butter and line it with baking paper.
  • Toast the walnuts by spreading them on a tray and roasting for 5 minutes. Remove from the oven and let cool.

Making the Batter

  • Brown the butter by placing it in a silver saucepan over medium-high heat until melted, then lower the heat to medium and simmer for 3 to 4 minutes until it smells nutty and has golden specks. Pour into a bowl.
  • Add the sugar to the hot butter and mix with a wooden spoon. Let cool for 3 minutes.
  • Add the egg and vanilla, mixing until combined. Then, add the flour and salt, mixing until thick and almost cookie dough-like.
  • Fold in the white chocolate chips and walnuts.

Baking

  • Scrape the mixture into the prepared pan, spread it out, and smooth the surface. Bake for 25 minutes until the edges are lightly golden and the surface is crackly.
  • Let rest in the pan for 10 minutes before moving to a cutting board. Cool for at least another 10 minutes, and sprinkle with sea salt flakes if desired. Cut into 16 squares or 9 giant squares.

Notes

Serve blondies warm or at room temperature. They can be enjoyed alone or with vanilla ice cream, whipped cream, or caramel sauce. Store in an airtight container at room temperature for 3 to 5 days or freeze for up to 3 months. Tips: Brown the butter well for flavor; avoid overmixing the batter after adding flour. Experiment with different nuts or chocolate chips.
