Pasta

  • 8 oz elbow macaroni Cook according to package instructions.

Salad Ingredients

  • 6 slices bacon, cooked crispy and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce

Dressing

  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • to taste salt and pepper

Instructions
 

Preparation

  • Cook the elbow macaroni according to package instructions; drain and cool.
  • In a large bowl, combine the cooked macaroni, crumbled bacon, cherry tomatoes, and shredded lettuce.
  • In a separate bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  • Pour the dressing over the macaroni salad and toss to coat.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3 days. The flavors will meld together, making it even tastier on the second day.
