  • 2 eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • 1 cup fresh or frozen blueberries
  • Pinch of salt
  • Optional: lemon zest nuts, or chia seeds

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, cinnamon, and salt.
  • Stir in oats and baking powder until combined.
  • Fold in blueberries gently.
  • Pour mixture into a greased 8x8 baking dish.
  • Bake for 35 minutes or until golden and set.
