Ingredients
  

Filling

  • 1 cup fresh or frozen blueberries Ensure thawed and drained if using frozen
  • 1 package (8 oz) cream cheese, softened Fully softened for easier mixing
  • ΒΌ cup granulated sugar

Assembly

  • 12 pieces egg roll wrappers
  • as needed cups oil for frying Use enough to submerge egg rolls
  • as needed tablespoons powdered sugar for dusting Optional for serving

Preparation

  • In a mixing bowl, combine the blueberries, softened cream cheese, and granulated sugar until well mixed.
  • Lay out an egg roll wrapper and place a spoonful of the blueberry mixture in the center.
  • Fold the wrapper according to package instructions, sealing the edges with a bit of water.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side.
  • Remove from oil and drain on paper towels.

Serving

  • Dust with powdered sugar if desired and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven to regain crispness. Optionally, add vanilla extract for extra flavor or use other fruits like raspberries or strawberries.
