- 40 fresh mint leaves plus extra for garnish
- ¼ cup sugar add more if the berries are tart
- 1 ½ cup pomegranate blueberry juice
- 1 ½ cup clear rum omit for a non alcoholic pitcher
- ½ cup fresh lime juice about 4 limes
- 3 cup chilled club soda
- 1 cup ice as needed
Cooking
Blend. Puree the blueberries with a few splashes of juice until smooth.
Muddle. Muddle the mint and sugar in a large pitcher.
Strain. Pour the blueberry puree through a fine strainer into the pitcher.
Add liquids. Stir in the juice, rum, and lime juice, then chill.
Top. Add the club soda just before serving and taste for sweetness.
Serve. Pour over ice and garnish with berries, lime, and mint.
Substitutions: Cranberry juice can replace the pomegranate blueberry juice, and extra juice and soda make a mocktail.
Tips: Chill the base ahead and add soda only at the last minute.
Storage: Ideal the same day. Keep the base covered in the fridge and add soda only to what you serve.
