  • 3 cups mixed salad greens A mix of your favorite greens.
  • 1 piece peach, sliced Use ripe peaches for sweetness.
  • 1 cup fresh blueberries Fresh blueberries add flavor and color.
  • ½ cup crumbled feta cheese Feta adds a savory touch.
  • ¼ cup chopped pecans For added crunch.

Dressing

  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 1 tablespoon honey Adjust for sweetness.
  • 1 teaspoon Dijon mustard For a tangy kick.
  • to taste Salt and pepper Add to taste.

Instructions
 

Preparation

  • In a large bowl, combine the mixed greens, sliced peaches, blueberries, crumbled feta cheese, and chopped pecans.
  • In a small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and gently toss to coat all the ingredients.
  • Serve immediately, or chill in the refrigerator for up to one hour to allow the flavors to blend.

Notes

Best to add dressing just before serving to keep greens fresh. Customize with additional fruits or different nuts.
