Ingredients
  

Dough and Filling

  • 1 can 16.3 oz refrigerated biscuit dough (8-count)
  • 2 cups fresh blueberries Use fresh for best flavor, but frozen can work too.
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 each egg (for egg wash)
  • Powdered sugar (for dusting)

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix blueberries, sugar, cornstarch, cinnamon, and lemon juice.
  • Roll out the biscuit dough and cut each piece in half.
  • Place a spoonful of the blueberry mixture in the center of each piece of dough.
  • Fold the dough over the filling and pinch to seal.
  • Place the bombs on a baking sheet lined with parchment paper.
  • Brush the tops with beaten egg.
  • Bake for 12-15 minutes or until golden brown.
  • Allow to cool slightly, then dust with powdered sugar before serving.

Notes

Serve warm for the best taste, delicious on their own or with vanilla ice cream. Store in an airtight container and enjoy within a few days.
