Preparation

  • Arrange the bacon slices on a wire rack over a baking tray and bake at 400°F for 15 minutes until they are deeply crisp. Once done, place the bacon on paper towels and finely chop it.
  • In a shallow bowl, vigorously whisk the eggs with the milk, vanilla extract, and cinnamon until thoroughly blended.
  • Mix the softened cream cheese with the chopped bacon in a small bowl until fully incorporated.

Cooking

  • Using a sharp knife, create a pocket in each bread slice. Fill each pocket with the bacon-cream cheese mixture and press it to close.
  • Dip each stuffed bread slice into the custard, turning to coat all sides evenly.
  • Melt butter in a non-stick skillet over medium heat. Cook the stuffed slices for 3 to 4 minutes on each side until they are deeply golden and cooked through.
  • In a small saucepan, warm the maple syrup, bourbon, vanilla extract, and a pinch of salt over low heat for 2 minutes, stirring until fragrant.
