Ingredients
  

Vegetables

  • 4 cups Broccoli florets Fresh or frozen
  • 4 cups Cauliflower florets Fresh or frozen

Cheese Sauce

  • 2 tablespoons Butter
  • ¼ cup All-purpose flour
  • 2 cups Heavy cream
  • 1 cup Cream cheese
  • 2 cups Shredded cheese (e.g., Cheddar, Monterey Jack) Mix of cheeses for flavor
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced

Topping

  • 1 cup Additional shredded cheese For the top layer
  • ½ cup Crushed crackers or panko breadcrumbs Optional for a crunchy topping

Instructions
 

Preparation

  • Wash broccoli and cauliflower, then cut them into bite-sized pieces.
  • Blanch the vegetables in boiling water for a few minutes to soften slightly.
  • In a pan, melt butter and sauté diced onion and minced garlic until fragrant.
  • Sprinkle flour over the mixture to create a roux and stir.
  • Gradually whisk in heavy cream until the sauce thickens.
  • Add cream cheese and shredded cheese, stirring until smooth and creamy.
  • In a baking dish, layer the blanched vegetables and pour the cheese sauce over them.
  • Sprinkle additional cheese and optional crackers on top.

Baking

  • Preheat the oven to 350°F (175°C).
  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for another 15 to 20 minutes until the top is golden brown.

Notes

This casserole can be prepared ahead of time and stored in the refrigerator. Allow it to come to room temperature before baking. Adding protein like chicken or turkey can make it heartier. Experiment with different cheeses and toppings for variations.
