  • 1 lb boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 8 oz pasta (like penne or fusilli)
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • ½ cup heavy cream
  • Salt and pepper to taste

  • Cook the pasta according to package instructions and add the broccoli florets in the last 3 minutes. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  • Reduce the heat to low, stir in the heavy cream, and add the cooked pasta and broccoli.
  • Add the cheddar cheese and stir until melted and well combined.
  • Serve hot.

Notes

To store leftovers, let the pasta cool completely, then transfer it to an airtight container. Refrigerate for up to 3 days. Reheat in the microwave or on the stove, adding a splash of milk or cream to restore creaminess.
