Broccoli Chicken Fritters

Ingredients
  

Fritter Mixture

  • 1 large head broccoli (cut into florets) Steamed and roughly chopped after cooking.
  • 500 g chicken breast or thigh (cut into 0.8cm / 1/3" pieces)
  • 75 g flour (any type) Add more if mixture is too wet.
  • 50 g parmesan cheese (grated or shredded)
  • 2 pieces eggs
  • 2 cloves garlic (minced)
  • ¾ tsp salt
  • Pepper (to taste)
  • 3-4 tbsp olive oil For frying.

Dipping Sauce (optional)

  • 165 g sour cream or Greek yogurt Can be used as a dip.
  • 2 tbsp ketchup For mixing with sour cream or yogurt.
  • Squeeze of lemon (plus more for serving, optional) Enhances flavor.

Instructions
 

Preparation

  • Preheat the oven to 100C/210F.
  • Steam the broccoli until tender, then roughly chop it.
  • In a bowl, add the chopped broccoli and the remaining fritter ingredients. Mix well.

Cooking

  • In a skillet, add enough olive oil to cover the base. Heat it over medium-high heat.
  • Dollop 1/4 cup of the mixture into the skillet and pat it down gently.
  • Cook for about 2.5 minutes until the fritter is deep golden brown, then flip and cook for another 2 minutes.
  • Once cooked, transfer the fritters to a rack and keep warm in the oven.

Notes

These fritters can be served with a sauce like sour cream or Greek yogurt mixed with ketchup. Make sure to chop broccoli finely for even cooking. You can add herbs or spices for extra flavor, such as oregano or chili flakes. For a healthier option, consider baking rather than frying.
