  • Instant read thermometer

Ingredients

Main Ingredients

  • 4 large boneless skinless chicken breasts about 2 lb total
  • 2 tbsp olive oil
  • 2 tbsp brown sugar light or dark
  • 1 ½ tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 ½ tsp kosher salt
  • ¼ tsp ground black pepper

Instructions

Cooking

  • Heat and line. Heat the oven to 400 degrees F and line a sheet pan with parchment paper.
  • Mix the rub. Combine the brown sugar, paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  • Coat. Dry the chicken, drizzle with olive oil, and press the rub onto both sides.
  • Bake. Bake 18 to 25 minutes until the thickest part reads 165 degrees F and the crust is deep golden.
  • Rest. Rest 5 minutes under foil, then slice and serve.

Notes

Substitutions: Use white sugar or honey in place of brown sugar, and smoked paprika for a deeper flavor.
Tips: Pound thick ends flat and pull the pan the moment the chicken hits 165 degrees F.
Storage: Refrigerate up to 3 days or freeze up to 3 months. Reheat to 165 degrees F.
