Main Ingredients
- 1 ½ lb 85% lean ground beef
- ½ cup plain dry bread crumbs
- ¼ cup whole milk
- 1 large egg
- ¼ cup finely chopped yellow onion
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup ketchup for the glaze
- 2 tbsp brown sugar packed, for the glaze
- 1 tsp Worcestershire sauce for the glaze
Cooking
Preheat. Set the oven to 375 degrees F and line a 9x13 baking dish with parchment paper. Soften the crumbs. Combine the bread crumbs and milk in a large bowl and wait 5 minutes.
Mix. Add the beef, egg, onion, salt, and pepper and mix by hand for about 30 seconds, until just combined.
Shape. Pat the meat into a loaf about 9 inches long and 4 inches wide, smoothing the top.
Glaze. Whisk the ketchup, brown sugar, and Worcestershire sauce until smooth and brush half over the loaf.
Bake. Bake 45 minutes, add the remaining glaze, then bake 15 minutes more until the center reaches 160 degrees F.
Rest. Rest for 10 minutes, then cut into slices about 3/4 inch thick.
Substitutions: Crushed crackers or rolled oats can replace the bread crumbs, and ground turkey works with 1 extra tbsp milk.
Tips: Mix just until combined and pull the loaf at 160 degrees F.
Storage: Refrigerate 3 to 4 days or freeze slices for up to 3 months. Reheat to 165 degrees F.
