Ingredients
  

For the Brownie Cookies

  • 1 stick 1 stick / 1/2 cup / 115g unsalted butter (cut into chunks)
  • 10 oz 10 oz / 300g dark chocolate chips (or buttons, melts, or block chocolate cut into chunks)
  • 1 cup 1 cup + 2 tbsp caster sugar
  • 3 pieces 3 eggs
  • 2 tbsp 2 tbsp cocoa powder
  • 1 tsp 1 tsp vanilla extract
  • ½ tsp 1/2 tsp salt
  • ½ tsp 1/2 tsp baking powder
  • ¾ cup 3/4 cup plain flour
  • ½ cup 1/2 cup dark chocolate chips

For the Peanut Butter Frosting

  • 1 cup 1 cup smooth peanut butter
  • 1 cup 1 cup confectioners’ sugar (icing sugar)
  • 2.5 oz 2.5 oz / 5 tbsp / 70g / 2/3 stick unsalted butter (softened)
  • ¾ tsp 3/4 tsp vanilla extract
  • ¼ tsp 1/4 tsp salt
  • cup 1/3 cup heavy cream (unwhipped pouring cream)

Instructions
 

Make the Brownie Cookie

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, melt butter and dark chocolate chips over low heat. Stir until smooth.
  • Remove from heat and add caster sugar, mixing well.
  • Add the eggs one by one, stirring well after each.
  • Mix in cocoa powder, vanilla extract, salt, baking powder, and flour. Stir to combine.
  • Fold in the additional dark chocolate chips.
  • Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  • Bake for about 10-12 minutes or until the edges are set. Let cool.

Make the Peanut Butter Frosting

  • In a bowl, cream together peanut butter, confectioners’ sugar, softened butter, vanilla extract, and salt.
  • Gradually add heavy cream, beating until smooth and fluffy.

Assemble

  • Take one brownie cookie and spread a generous dollop of peanut butter frosting on the flat side.
  • Top it with another brownie cookie, flat side down, to form a sandwich.
  • Repeat with the remaining cookies and frosting.

Notes

Make sure to let the brownie cookies cool completely before adding frosting, or it may melt. For an extra crunch, you can add chopped nuts or chocolate chips into the frosting. Adjust the sweetness of the frosting by adding more or less confectioners’ sugar based on your taste. Store any leftover cookie sandwiches in an airtight container at room temperature for up to 3 days. If you want them to last longer, keep them in the refrigerator for up to a week. Just bring them back to room temperature before serving.
