- 2 cups all-purpose flour
- ⅓ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup unsalted butter cold and cubed
- ½ cup heavy cream plus extra for brushing
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blackberries
- Optional: coarse sugar for sprinkling
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
In a small bowl, whisk together cream, egg, and vanilla. Pour into the flour mixture and stir until just combined.
Gently fold in the blackberries, trying not to mash them.
Turn dough out onto a lightly floured surface and shape into an 8-inch circle.
Cut into 8 wedges and place on prepared baking sheet.
Brush tops with extra cream and sprinkle with coarse sugar (optional).
Bake for 18–20 minutes, or until golden brown.
Cool slightly before serving. Enjoy warm or at room temperature.
