Ingredients
  

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter cold and cubed
  • ½ cup heavy cream plus extra for brushing
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries
  • Optional: coarse sugar for sprinkling

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
  • In a small bowl, whisk together cream, egg, and vanilla. Pour into the flour mixture and stir until just combined.
  • Gently fold in the blackberries, trying not to mash them.
  • Turn dough out onto a lightly floured surface and shape into an 8-inch circle.
  • Cut into 8 wedges and place on prepared baking sheet.
  • Brush tops with extra cream and sprinkle with coarse sugar (optional).
  • Bake for 18–20 minutes, or until golden brown.
  • Cool slightly before serving. Enjoy warm or at room temperature.
