  • 1 medium onion, chopped

  • 4 cups Brussels sprouts, trimmed and halved
  • 4 cups chicken or vegetable broth Ensure it's gluten-free if necessary.
  • to taste salt and pepper Adjust to taste.
  • as needed chopped fresh parsley for garnish

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped bacon and cook until crispy.
  • Add chopped onion and minced garlic, cooking until the onion is translucent.
  • Stir in Brussels sprouts and cook for a few minutes.
  • Pour in the broth and bring to a boil.
  • Reduce heat and simmer for about 15-20 minutes, until Brussels sprouts are tender.
  • Use an immersion blender to puree the soup until smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with parsley.

Notes

This soup pairs well with crusty bread or a light salad. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Thaw before reheating.
