  • 1 loaf homemade sandwich bread Cut into 1/2-inch thick slices and cubed
  • ¼ cup salted Irish butter Melted
  • 2 ½ cups chicken broth
  • ¼ cup dried parsley
  • 1 ¼ tsp onion powder
  • 1 ¼ tsp poultry seasoning
  • 2 tsp salt
  • ¼ tsp black pepper

Preparation

  • Preheat your oven to 400°F.
  • Butter a 9×13 pan and set it aside.
  • Cut the sandwich loaf into 1/2-inch thick slices, then cube the bread. Place this into a large mixing bowl.
  • Sprinkle the dried parsley, onion powder, poultry seasoning, salt, and black pepper over the bread cubes.
  • In a large measuring cup, mix together the chicken broth with the eggs.
  • Pour this mixture over the cubed bread along with the melted butter, and toss well to coat every piece of bread.
  • Transfer the stuffing to the buttered pan.

Baking

  • Bake it uncovered in your preheated oven for 45-50 minutes.
  • The stuffing should have a custard-like soft interior and a crispy outside. It's done when the internal temperature reaches 160°F.

Notes

Use day-old bread for best texture. Customize with fresh herbs or add vegetables like onions and celery for extra flavor. Avoid overmixing to prevent mushy stuffing. Store leftovers in airtight containers in the refrigerator for up to three days, or freeze for up to three months.
