Ingredients
  

Café de Paris Butter

  • 100 g unsalted butter (softened)
  • 2 tbsp eschalot (small, very finely chopped)
  • 1 clove garlic (finely minced)
  • 3 fillets anchovy fillets (finely chopped)
  • 1 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp curry powder (mild)
  • ½ tsp paprika (plain or sweet, not smoked or spicy)
  • 1 tsp kosher / cooking salt
  • 2 tsp tarragon (finely chopped)
  • 2 tsp parsley (finely chopped)

Steak

  • 2 pieces steaks of choice e.g., ribeye, sirloin, or filet mignon
  • ½ tsp cooking/kosher salt per steak
  • ¼ tsp black pepper per steak
  • 1 tbsp vegetable or canola oil

Instructions
 

Café de Paris Butter Preparation

  • In a bowl, combine the softened butter, eschalot, garlic, anchovy fillets, lemon juice, Worcestershire sauce, Dijon mustard, curry powder, paprika, salt, tarragon, and parsley. Mix well until fully combined.
  • Once mixed, place the butter on a piece of plastic wrap, shape it into a log, and wrap it tightly. Refrigerate until firm.

Cooking Steak

  • Season the steaks with salt and pepper on both sides.
  • Heat oil in a pan over medium-high heat. Once hot, add the steaks.
  • Cook to your desired doneness, usually about 3-4 minutes for medium-rare.
  • Remove steaks from the pan and let them rest for a few minutes before serving.

Serving

  • To serve, place the cooked steak on a plate and slice it. Add a generous dollop of the Café de Paris butter on top of the hot steak, allowing it to melt slightly.
  • This dish pairs well with crispy French fries, a fresh salad, or steamed vegetables.

Notes

If you have leftovers, you can store the steak in an airtight container in the refrigerator for up to 2 days. The butter sauce can also be stored in the refrigerator for about a week. You can reheat the steak gently in a pan or microwave before serving. For extra flavor, you can add a splash of red wine to the pan after searing the steak. Customize the butter by adding your favorite herbs or spices, such as chives or dill.
