Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and minced garlic, and sauté until softened.
  • Add sliced smoked sausage, cooking until browned.
  • Stir in chopped bell peppers and cook for an additional 2-3 minutes.
  • Add rice and Cajun seasoning, stirring to combine.
  • Pour in chicken broth, bring to a boil, then reduce heat to low.
  • Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  • Fluff with a fork and serve hot.

Notes
