  • ½ cup unsalted butter, softened Make sure butter is at room temperature for easier mixing.
  • 1 cup ricotta cheese Low-fat ricotta cheese can be used, but it may affect creaminess.
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour Can be substituted with gluten-free flour blend.
  • ½ tsp baking powder
  • ¼ tsp salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the ricotta cheese, egg, and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool before serving.

Notes

These Cannoli Cookies are best served fresh out of the oven but are also delicious at room temperature. They can be dusted with powdered sugar for an extra touch. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
