Equipment

  • Large skillet
  • Spatula

Ingredients

Main Ingredients

  • 16 oz ground beef 80 percent lean
  • 3 large yellow onions thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp all purpose flour
  • ½ cup low sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 hamburger buns toasted
  • 4 slices provolone cheese or Swiss

Instructions

Cooking

  • Caramelize. Heat the olive oil in a large skillet over medium heat, add the onions and salt, and cook 20 to 25 minutes, stirring often, until deep golden and jammy.
  • Brown. Push the onions to the side, add the beef, and cook 7 to 8 minutes, breaking it up, until it reaches 160 degrees F, then drain excess grease.
  • Simmer. Stir in the garlic and thyme for 30 seconds, sprinkle on the flour, then pour in the broth and Worcestershire and simmer 4 to 5 minutes until thick.
  • Toast. Toast the buns lightly and top each bottom half with a slice of provolone.
  • Assemble. Pile the onion beef mixture onto the cheese, cap with the bun tops, and serve hot.

Notes

Substitutions: Use Swiss in place of provolone, or butter in place of olive oil for the onions.
Tips: Keep the heat at medium and add a splash of water if the onions stick instead of turning up the heat.
Storage: Refrigerate the filling in an airtight container for up to three days or freeze for up to two months.
