Ingredients
  

For the filling

  • 2 tablespoons butter plus extra for greasing the dish
  • 1 cup finely chopped yellow onion
  • 1 medium garlic clove, minced
  • 2 cups sweet corn fresh, frozen, or canned
  • 1 cup shredded cheddar cheese
  • 3 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • Salt and pepper to taste

Preparation and Baking

  • Preheat the oven to 375°F (190°C) and grease a pie dish with butter.
  • In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • In a large bowl, combine the sweet corn, sautéed onions and garlic, cheddar cheese, eggs, milk, flour, and season with salt and pepper. Mix until fully combined.
  • Pour the mixture into the prepared pie dish.
  • Bake for 30-35 minutes, or until the top is golden and a knife inserted in the center comes out clean.
  • Allow to cool slightly before slicing and serving.

Notes

Use fresh sweet corn when it's in season for the best flavor. You can mix and match cheeses; for a twist, try adding Monterey Jack or pepper jack cheese for a little heat. Make sure to let the pie cool a bit before cutting; this helps it hold its shape better. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. You can also add cooked bacon or diced bell peppers for extra flavor.
