Ingredients
  

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2  tbsp butter
  • 2  tbsp all‑purpose flour or gluten‑free flour
  • 1 ½ cups milk dairy or plant‑based
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sour cream or Greek yogurt
  • ½  tsp salt
  • ¼  tsp black pepper
  • Optional topping: ½ cup breadcrumbs or crushed pork rinds

Instructions
 

  • Preheat & blanch: Preheat oven to 375 °F (190 °C). Lightly steam or blanch broccoli and cauliflower for 3–4 minutes; drain well.
  • Sauté aromatics: In a saucepan, melt butter over medium heat. Sauté onion and garlic until soft, about 3 minutes.
  • Make sauce: Stir in flour and cook 1 minute. Gradually whisk in milk, cooking until thickened. Remove from heat, then stir in cheddar, mozzarella, and Parmesan until melted.
  • Mix casserole: In a large bowl, combine vegetables, cheese sauce, sour cream, salt, and pepper.
  • Assemble: Transfer mixture to a greased 9x13‑inch baking dish. Sprinkle breadcrumbs or pork rinds over the top if using.
  • Bake: Bake 30–35 minutes until bubbly and golden on top.
  • Rest & serve: Let stand 5 minutes before serving warm.
