- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 tbsp butter
- 2 tbsp all‑purpose flour or gluten‑free flour
- 1 ½ cups milk dairy or plant‑based
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup sour cream or Greek yogurt
- ½ tsp salt
- ¼ tsp black pepper
- Optional topping: ½ cup breadcrumbs or crushed pork rinds
Preheat & blanch: Preheat oven to 375 °F (190 °C). Lightly steam or blanch broccoli and cauliflower for 3–4 minutes; drain well.
Sauté aromatics: In a saucepan, melt butter over medium heat. Sauté onion and garlic until soft, about 3 minutes.
Make sauce: Stir in flour and cook 1 minute. Gradually whisk in milk, cooking until thickened. Remove from heat, then stir in cheddar, mozzarella, and Parmesan until melted.
Mix casserole: In a large bowl, combine vegetables, cheese sauce, sour cream, salt, and pepper.
Assemble: Transfer mixture to a greased 9x13‑inch baking dish. Sprinkle breadcrumbs or pork rinds over the top if using.
Bake: Bake 30–35 minutes until bubbly and golden on top.
