Cheesy Baked Mexican Beef and Beans

Ingredients
  

Main Ingredients

  • 2 tbsp olive oil
  • 1 medium red onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 green capsicum (bell pepper), cut into 1cm (1/2") cubes or other color
  • 500 g beef mince (ground beef)
  • 400 g can red kidney beans or black beans, drained or other beans
  • 1 cup tomato passata
  • cup pickled sliced jalapeño
  • 1 ½ cups Colby cheese, shredded or other cheese

Spices

  • 1 ½ tsp cumin powder
  • 1 ½ tsp smoked paprika sub normal paprika
  • 1 tsp garlic powder sub onion powder
  • 1 tsp onion powder sub garlic powder
  • ½ tsp cayenne pepper sub black pepper
  • 1 tsp cooking/kosher salt

Instructions
 

Preparation

  • Preheat the oven to 200°C / 400°F (180°C fan).
  • Heat the olive oil in a cast-iron skillet over medium-high heat. Cook the onion, garlic, and capsicum for 3 minutes.

Cooking

  • Add the beef and cook, breaking it up until there is no raw meat.
  • Add the spices and cook for 1 more minute.
  • Add the kidney beans and tomato passata. Stir everything together and bring to a simmer.

Baking

  • Scatter the jalapeño slices across the surface, then top with cheese.
  • Place the skillet in the oven and bake for 15 minutes without a lid.
  • Scoop into bowls and serve with corn chips or tortillas and your favorite Mexican fixings.

Notes

Adjust the spice level by adding more or fewer jalapeños or cayenne pepper. Feel free to substitute the beef with turkey or chicken for a lighter option.
