  • 1 cup Zucchini, grated
  • 1 cup Bell Peppers, diced
  • 1 cup Spinach, chopped
  • 1 cup Mushrooms, diced
  • 1 cup Carrots, grated
  • 1 cup Cheddar cheese, shredded Or Mozzarella, Feta, or Parmesan for variation
  • 1 cup Cream cheese, softened

Herbs and Spices

  • 1 tbsp Basil, dried
  • 1 tbsp Oregano, dried
  • 1 tbsp Thyme, dried
  • 1 tsp Garlic powder

Wrappers

  • 12 pieces Spring roll wrappers or pastry dough

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grate zucchini, carrots, and bell peppers. Season with salt and pepper.
  • In a large bowl, combine all grated vegetables, cream cheese, shredded cheese, and herbs. Mix well.
  • Take a spring roll wrapper and place a spoonful of filling in the center. Roll it up, tucking in the sides to secure the filling.

Baking

  • Place the rolls on a baking sheet lined with parchment paper.
  • Bake for about 25-30 minutes until golden brown.

Notes

Serve with tomato chutney, yogurt dip, or hummus for extra flavor. These rolls can be customized with various fillings and can easily be made gluten-free by using appropriate wraps.
