Ingredients
  

For the Casserole

  • 4 cups broccoli florets Fresh or frozen, blanched for best texture.
  • 2 cups shredded sharp cheddar cheese Can substitute with Monterey Jack or a blend of cheeses.
  • 1 cup milk Can use half and half for richer flavor.
  • 3 tablespoons butter For making roux and topping.
  • 3 tablespoons all-purpose flour To thicken the cheese sauce.
  • 1 cup crushed buttery crackers Ritz or Town House recommended for topping.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Blanch broccoli florets in boiling salted water for 2-3 minutes, then cool in an ice bath.
  • In a saucepan, melt butter, whisk in flour, and gradually add milk while stirring until thickened.
  • Remove from heat and stir in shredded cheese until melted.
  • Combine blanched broccoli with cheese sauce in a large bowl until evenly coated.
  • Transfer the mixture to a baking dish, sprinkle crushed crackers on top, and drizzle with melted butter.

Baking

  • Bake in preheated oven for 20-25 minutes until bubbly and golden brown.
  • Optional: For a browner topping, broil for an additional few minutes, watching closely.

Notes

This casserole can easily be made ahead of time and frozen. Leftovers store well in airtight containers for up to 4 days.
