  • 1 medium head green cabbage, chopped (about 6 cups)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten

Optional Topping

  • ½ cup breadcrumbs optional topping
  • 1 tbsp melted butter optional, for topping

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Stir in the chopped cabbage and cook until softened, about 8–10 minutes. Season with salt, black pepper, and thyme.
  • In a large bowl, mix together the sour cream, cheddar cheese, mozzarella cheese, Parmesan cheese, and beaten eggs until well combined.
  • Add the cabbage mixture to the bowl and stir everything together.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • If using breadcrumbs, mix them with melted butter and sprinkle on top of the casserole.
  • Bake in the oven for 30–35 minutes, or until bubbly and golden brown.
  • Let it rest for 5–10 minutes before serving.

Notes

Cheesy Cabbage Casserole can be served as a side dish or main course. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. Reheat as needed. For extra flavor, consider adding cooked ground meat or different vegetables.
