Cheesy Cajun Garlic Chicken Rotini Skillet

Ingredients
  

Chicken and Pasta

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized chunks
  • 12 oz rotini pasta

Spices and Aromatics

  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning Adjust based on spice preference.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 5 cloves garlic, minced
  • 1 tbsp butter

Sauce and Cheese

  • 1 cup heavy cream You can use half-and-half for a lighter version.
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup shredded cheddar cheese

Garnish

  • Fresh parsley, chopped (optional)

Instructions
 

Preparation

  • Bring a large pot of water to a boil. Cook pasta according to package directions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Toss the chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

Cooking

  • Add the chicken to the skillet and cook until browned and fully cooked, about 8-9 minutes. Remove from skillet and set aside.
  • In the same skillet, melt the butter. Add the garlic and sauté for 1 minute until fragrant.
  • Stir in the chicken broth and heavy cream, then bring it to a simmer.
  • Add the mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.
  • Add the cooked rotini and chicken back into the skillet.
  • Toss everything until it's well-coated in the Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.
  • Garnish with parsley if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove, adding a splash of milk or cream if needed.
