  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup cooked chicken, shredded Rotisserie chicken works well
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 pieces flour tortillas
  • Salt and pepper to taste

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add the diced onion and minced garlic, and sauté until soft.
  • Stir in the shredded chicken and season with salt and pepper.
  • Remove from heat and mix in the shredded cheese until melted.
  • Place a tortilla in the skillet, spoon in the chicken mixture, and top with another tortilla.
  • Cook until golden brown on both sides, then slice into sliders.
  • Serve warm with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave (may lose crispiness). Feel free to customize with your favorite dipping sauces like salsa, guacamole, or sour cream.
